Ginger Snap Cookies
Hello and happy Blogmas! One of my favourite things to make at Christmas are Ginger Snap Cookies. I first discovered the festive recipe in a great book called (yep, you guessed it) Ginger Snaps by Cathy Cassidy. Cathy Cassidy has been a firm favourite author of mine for a long time now and she always has a cute recipe or something similar in the back of each of her fab books. If you're looking for a last minute Christmas prezzie for a teenage relative then Cathy Cassidy's books are a great choice.
Here's the recipe for these tasty treats:
Ingredients
350g flour
175g light brown sugar
2 tablespoons golden syrup
1/2 teaspoon ground cinnamon
100g butter
1 egg
1 1/2 teaspoons ground ginger
1 teaspoon bicarbonate of soda
Method
- Set oven to 170C
- Grease 2 baking trays
- Sift flour, ginger, cinnamon and bicarbonate of soda into a bowl.
- Chop butter, add to dry ingredients and use your fingers to turn the mix into "breadcrumbs".
- Stir in the sugar.
- Add beaten egg and golden syrup.
- Mix well.
- Make into dough with your hands.
- Roll out until around 1/2 centimetre thick and cut into festive shapes.
- Pop into the oven for 10 to 15 minutes, remembering to check every so often as you don't want the cookies to burn.
- Make Royal Icing and decorate the chrismassy shapes however you would like.
I used some lovely fresh eggs from our hens to make the cookies!
